It's a simple country recipe, very good. A tip for washing snails well: put a handful of coarse salt on them and turn them well for a couple of minutes and then rinse very well several times.
INGREDIENTS
- 1 kg snails
- 1 large onion
- 2 green hot chili peppers
- 1 celery stick
- 1 bunch parsley
- 4 potatoes
- 250 g peeled tomatoes
- 1 tablespoon tomato paste
- salt
- extra virgin olive oil
INSTRUCTIONS
- Wash the snails well and place them in a pot with water. Cover with the lid and place the pan on a low heat to let them come out of the shell a little.
- Bring the snails to the boil and cook them for 10 minutes. Drain them.
- In a pan, place the oil, the coarsely chopped onion, the 2 green chili peppers, the celery and the chopped parsley. Brown well
- Add the peeled tomatoes, tomato paste and a little salt. Leave to cook for 20 minutes, adding a little water if needed.
- Add the snails and potatoes, peeled and cut into 4 pieces. Let everything cook until the potatoes are cooked.
- Serve with slices of bruschetta bread.
